What's in Season: Silver Queen Corn

A summer salad standout

Perfectly sweet with pearly white kernels, this regional corn generally makes its debut in July, but in some areas of the South (say, Florida) you might find it in early to mid-June. For an easy prep: Char it on the grill, saw the kernels off the cob, and sprinkle them over a salad of fresh greens. It’s also great in a succotash with lima beans and smoked country sausage. But be warned, there are Silver Queen impostors out there, often falsely labeled, so buy from a vendor you trust to make sure you’re getting the real deal.
