Cast-Iron Skillet Chocolate Chip Cookie
Makes 1 large cookie
Yes, your cast-iron skillet is also a great baking sheet—just smaller, and with sides. So why not bake a giant cookie in it?

Ingredients

1 cup butter, softened
½ cup white sugar
1 cup brown sugar
2 eggs
2 tsp. vanilla extract
1 tsp. baking soda
2 tsp. hot water
½ tsp. salt
2½ cups flour
2 cups semi-sweet chocolate chips
Preparation
Preheat oven to 375 degrees. Heat the skillet in the oven while making the batter.
In a large bowl, cream together the butter and sugars. Add the eggs one at a time, being sure to combine thoroughly before proceeding. Stir in the vanilla.
Dissolve the baking soda in the hot water and add to the batter along with the salt. Stir in the flour and chocolate chips.
Remove the skillet from the oven and spoon the batter into it, smoothing the top with a spatula.
Bake until golden, about 15 minutes. Serve with ice cream.
**Note: This recipe uses a 12.5″ skillet. A slightly larger or smaller skillet can be used; just keep an eye on cooking time.
