Created by lead bartender Greg Hojnacki at the Garden & Gun Club, this vibrant cocktail combines the smooth kick of vodka with the tangy sweetness of homemade pineapple syrup and the zing of fresh lime juice. Topped off with a splash of ginger beer, it’s the ideal sip when you want to cool down after a long day or add a tropical flair to your next gathering.

Ingredients

  • PINEAPPLE MULE (YIELD: 1 COCKTAIL)

    • 2 oz. vodka

    • 1 oz. pineapple syrup

    • 1 oz. fresh lime juice

    • 2 oz. ginger beer

  • Pineapple Syrup (YIELD: 4 cups)

    • 1 whole pineapple, core and all

    • 1 cup raw cane sugar

    • 2 cups water


Preparation

  1. Make the pineapple syrup: Cut up the whole pineapple, core and all. In a medium saucepan, gently cook the pineapple pieces over medium heat for about 10 minutes, stirring occasionally. Add the raw cane sugar and water, stirring until the sugar is fully dissolved. Bring the mixture to a simmer and let it cook for 15 minutes, stirring occasionally to meld the flavors. Strain the mixture through a fine-mesh sieve or cheesecloth, pressing lightly on the solids to extract as much syrup as possible. Let the syrup cool to room temperature before transferring it to an airtight container. Store in the refrigerator for up to two weeks.

  2. Make the cocktail: Combine all ingredients in a mule tin. Top with crushed ice and give it a slight swizzle. Garnish with a thin lime wheel.
