Sunshine Carrot Juice 

(Yield: Approximately 2–3 servings)


Ingredients

    • 5 medium carrots (about 1 lb., peeled if desired)

    • 1 fresh pineapple, chopped (about 4–5 cups)

    • 4 oranges, juiced (yielding about 1–1½ cups of juice)

    • 1 cup kumquats, sliced, seeds removed

    • 2 medium-size apples, cored and sliced

    • 1 tbsp. lemongrass, minced

    • 1 lemon, juiced

    • 1–2 tbsp. honey

    • Pinch cayenne


Preparation

  1. Prepare all ingredients by washing, peeling (as needed), and chopping them to fit your juicer. Add the carrots, pineapple, kumquats, oranges, and apples to the juicer. Stir in the lemon juice, honey, and cayenne. Adjust sweetness or spice level by adding more honey or cayenne. Chill in pitcher. Pour the juice into glasses and serve.

  2. Note: The juice will last up to four days in the fridge.
