Tailgate season has arrived, and with it the delicious, wafting scent of perfectly smoked brisket. Not your brisket, of course. If you’re like me, your own attempts at brisket end up somewhere between “warm catcher’s mitt” and “July asphalt.” But someone out there is doing it right!

As tempting as it is to journey to your local legendary barbecue shack and wait for hours on end, sometimes you have to source your brisket from other, shall we say, speedier outlets.
Although you’ll need to manage your expectations a touch, you can indeed find reasonably priced, tailgate-ready brisket sandwiches at notable Southern-based chains. These four will tide you over until your next lengthy wait for some artisanal brisket.
Publix
Headquarters: Lakeland, Florida
If you’re not already familiar with the glory that is the PubSub, join the flock and find salvation. The Florida-based grocery chain’s sandwiches are legendary, and they offer multiple reliable brisket-based options.
Verdict: The Stacked Brisket, presented on a round bun, is a mouthful of respectable-brisket goodness. The Southern-Style Brisket, however, brings in cheddar cheese, barbecue sauce, dill pickles, and fried onions. It’s like Willie Nelson at top volume, an overwhelming amount of a good thing.
Traditional presentation: Swaddled in white bags and distinctive green wrappers that get torn open before the sandwich gets anywhere near a plate.
Tailgate viability: Solid to high. The Stacked sandwich works fine as just meat and bun, with only a hint of sauce. The Southern-Style and Spicy variants can be a bit much, but after a couple cocktails no one will care.
Firehouse Subs
Headquarters: Jacksonville, Florida
Firehouse is a suburban staple, built on cranking out subs with speed at scale, with an array of sauces (more on that later) to customize your sandwich. Laborious meat craftsmanship isn’t the selling point here; assembly-line sandwich delivery is.
Verdict: Honestly, there’s not a whole lot of textural distinction between Firehouse’s Smokehouse Beef & Cheddar Brisket and, say, ham or turkey. Sliced thin, slathered with cheese and mayo, this is “food you get when the kids are screaming” food.
Traditional presentation: In a clamshell to-go box, surrounded by a horde of dirty, maniacal, rampaging youth soccer players after a Saturday game.
Tailgate viability: Workable, as long as the tailgate is less than ten yards from the Firehouse counter. Any longer than that, and the cheese congeals. But the kids will still love it.
Buc-ee’s
Headquarters: Lake Jackson, Texas
The gas station/emporium/lifestyle behemoth dishes up brisket as one of its hundreds of branded offerings. Listen for the pitmasters to call out “Fresh brisket on the board!” and grab a chopped or sliced variant.
Verdict: Better than you’d expect. The sauce is pleasantly peppery, and the brisket carries its smoke flavor for miles and miles of open road.
Proper presentation: Wrapped tight in foil, perfect for one-handed snacking as you roll on down the highway. It’s like Buc-ee’s knows its audience.
Tailgate viability: Strong. Buc-ee’s sandwiches travel well. Pair ’em with a bag of sugar-bomb Buc-ee’s nuggets and you’ve got yourself a low-stress tailgate winner.
Arby’s
Headquarters: Sandy Springs, Georgia
“Barbecue sauce is like a beautiful woman,” Lyle Lovett apparently once said. “If it’s too sweet, it’s bound to be hiding something.” Related: Arby’s has a whole lot of different, very sweet sauces.
Verdict: Incomplete. After years as a menu staple, Arby’s Smokehouse Brisket is now a limited-time option, and this fall is apparently not one of the times. They’re currently offering Steak Bites, though! That’s kind of like brisket, right?
Traditional presentation: On a tray beside a box of curly fries, often at an unnatural dining hour.
Tailgate viability: I mean, if you have to. Arby’s has its place, but “centerpiece of a catering effort” isn’t it.
