Meet the Doctor John, a Louisiana Rum Cocktail with Tiki Roots

In his New Orleans bar, Jeff Berry riffs on the century-old Dr. Funk using hometown flavors

This is a Louisiana-fied version of the famous Dr. Funk, a tiki classic with a history that stretches back more than a century. Originally consisting of absinthe with lemonade or limeade, it was named for Bernhard Funk, Robert Louis Stevenson’s physician during his last days in Samoa, then later modified by Don the Beachcomber with rum and pomegranate. Latitude 29’s Jeff Berry has made a more homegrown version that uses Louisiana rum, Herbsaint, and locally produced El Guapo bitters.

Doctor John

Yield: 1 cocktail

Ingredients

    • ¾ oz. fresh lime juice

    • ½ oz. honey syrup (equal parts honey and water, warmed and stirred until dissolved)

    • ½ oz. pomegranate syrup (available online)

    • ¼ oz. Herbsaint

    • 1½ oz. Oxbow Estate white rum

    • 3 dashes El Guapo chicory pecan bitters

    • 2 dashes Angostura bitters

    • Cherry and lime wheel, for garnish

Preparation

  1. In a blender, flash-blend all ingredients except garnishes with about 6 fluid ounces of crushed ice for no more than 3 to 5 seconds. Pour into a pilsner-style glass. Add more crushed ice to fill.
  2. Garnish with a cherry and lime wheel, preferably affixed to a Louisiana state flag toothpick (available online). Serve with a straw.
