The Pacific Northwest native Aaron Bludorn developed a passion for food and service early on. It led him to Napa Valley, where he spent three years at Cyrus Restaurant, working under Michelin-starred chef Douglas Keene, then New York City’s Café Boulud, where he worked under executive chef Gavin Kaysen. Bludorn eventually took over the executive chef position, where he mentored the next generation of culinary leaders and became deeply involved with Careers Through Culinary Arts Programs (C-CAP) as a board member. In 2018, he competed in Netflix’s “The Final Table” before moving to Houston, Texas, where he opened Bludorn and Navy Blue. Bludorn’s menu dances between French-inspired Gulf Coast cuisine, showcasing the region’s diverse bounty with locally sourced ingredients. While Navy Blue, Aaron’s second restaurant concept, crafts a modern American seafood narrative, paying homage to the Texas Gulf Coast. In 2022, Bludorn was named a semi-finalist for James Beard Awards‘ Best New Chef in Texas.
