The main course: roasted Scottish salmon with crispy fingerling potatoes, country ham, swiss chard, and tomato-fennel coulis.

The dessert course: Georgia pecan tart with maple bourbon reduction and spiced whipped cream, paired with the Bourbon Brûlée cocktail, made with Penelope Straight Bourbon, crème brûlée liqueur, chocolate bitters, and cinnamon.
