In partnership with Amelia Island, Garden & Gun presents a seasonal seafood supper at The Preserve at The Amelia River Club, a private waterfront venue with sweeping views of the salt marsh and Intracoastal Waterway. Guests will experience an alfresco cocktail hour with specialty libations prepared by Carilyn Powers of Salt at The Ritz-Carlton, Amelia Island, followed by a thoughtfully curated menu from three exceptional local chefs—Omar Collazo of the Omni Amelia Island Resort & Spa, David Echeverri of David’s Restaurant & Lounge, and Phil Waddell of España Restaurant & Tapas—each celebrating the vibrant flavors and coastal bounty of the region.

Guests are invited to enjoy preferred overnight rates at the Omni Amelia Island Resort and The Ritz-Carlton, Amelia Island.


FEATURED TALENT

Omar Collazo

Executive chef Omar Collazo joined Omni Hotels & Resorts in 2014 and has held multiple culinary positions with the brand. In 2021, he was promoted to the executive chef role at Omni Amelia Island Resort & Spa, where he oversees culinary operations for more than ten dining outlets and banquet functions across the resort. Prior to joining Omni Hotels & Resorts, Collazo spent years working alongside chef Kenny Gilbert in Jacksonville Beach, Florida.

David Echeverri

David Echeverri is the executive chef and owner of David’s Restaurant and Lounge in Amelia Island, Florida, where he leads the culinary vision for the refined yet welcoming restaurant. Born in Miami, Florida, and raised in Medellín, Colombia, Echeverry brings more than eighteen years of experience to his kitchen, blending his Colombian heritage with South American influences and global inspiration.

Phil Waddell

Phil Waddell took over as executive chef of Espana Restaurant & Tapas in August 2023, continuing the legacy of the beloved Fernandina Beach staple known for its Spanish- and Portuguese-inspired cuisine. Originally from north Georgia, Waddell began his culinary journey in his family’s barbecue and steak restaurants before serving as a cook in the U.S. Navy. He went on to refine his craft in several Jacksonville-area kitchens, including Zeta Brewing Company, Casa Marina Hotel, and Moxie Kitchen.

Carilyn Powers

Carilyn Powers is the director of restaurants at The Ritz-Carlton, Amelia Island, where she leads front-of-house operations across the resort’s five dining outlets. A Tallahassee native and graduate of Florida State University, Powers began her career at the property as a server and quickly rose through the ranks, recognized for her creativity, leadership, and attention to detail. She played a pivotal role in the reimagination of Salt, the resort’s AAA Five Diamond restaurant, contributing to its cocktail program, menu design, and service experience.
