Chris Shepherd’s Green Onion Dip

One Houston chef’s riff on a childhood favorite

Ingredients

    • 2 tbsp. vegetable oil

    • 1 quart green onions, chopped

    • 2 tsp. chopped garlic

    • 1/2 cup white wine

    • 1 tbsp. unsalted butter

    • 2 cups sour cream

    • 1 cup mayonnaise

    • 1 tbsp. Worcestershire

    • ½ tsp. celery salt

    • Kosher salt and black pepper, to taste

    • 2 tbsp. chopped chives, to garnish


Preparation

  1. Add vegetable oil to a large skillet over medium heat and sweat onions and garlic until onions are translucent, 5-10 minutes. Add wine and butter and cook until thickened, 5-10 more minutes. Remove mixture from heat and let cool completely. Once cooled, combine with other ingredients. Garnish with chopped chives and serve with pork rinds.
