Chris Shepherd’s Green Onion Dip
One Houston chef’s riff on a childhood favorite

Ingredients

2 tbsp. vegetable oil
1 quart green onions, chopped
2 tsp. chopped garlic
1/2 cup white wine
1 tbsp. unsalted butter
2 cups sour cream
1 cup mayonnaise
1 tbsp. Worcestershire
½ tsp. celery salt
Kosher salt and black pepper, to taste
2 tbsp. chopped chives, to garnish
Preparation
Add vegetable oil to a large skillet over medium heat and sweat onions and garlic until onions are translucent, 5-10 minutes. Add wine and butter and cook until thickened, 5-10 more minutes. Remove mixture from heat and let cool completely. Once cooled, combine with other ingredients. Garnish with chopped chives and serve with pork rinds.
