Nikko was born and raised in the Philippines. After immigrating to the United States in 2011 and working as a nurse, Cagalanan found himself inspired to pursue cooking with the desire to share his passion for the Filipino food his grandma Mansueta made. He moved to Charleston in 2018 to further his culinary career and founded pop-up Mansueta’s Filipino Food in early 2019. Over the years, Nikko has brought his elevated interpretation of traditional Filipino dishes to cities across the country through pop-ups and collaborations. In 2022, he was named “Best Filipino Restaurant in South Carolina” by Food & Wine in addition to winning the title of Chopped Champion in November 2022. Last year, Nikko eagerly shares his culture with patrons at the newly opened Kultura, a space where he can showcase his heritage and host chefs representing diverse cultures through food. His efforts at Kultura have earned him recognition as a finalist for “Emerging Chef” by the James Beard Awards this year.
