Bee’s Knees from the Garden & Gun Club

The restaurant’s version of the classic cocktail puts pear and honey flavors together for a winning combination


Citrus fruits often take the spotlight in seasonal cocktails, but when the temperatures dip it’s time for tree fruits to have their day. This Bee’s Knees libation from the Garden & Gun Club Atlanta, puts pear on a pedestal with the help of St. George pear liqueur. Add to that a touch of Earl Grey cinnamon honey syrup and you have a festive beverage that’s as much a cocktail as a tonic.

Ingredients

  • Bee's Knees (Yield: 1 Cocktail)

    • 1 oz. Citadelle gin

    • ½ oz. St. George pear liqueur

    • ½ oz. Earl Grey cinnamon honey syrup (recipe follows)

    • 1 oz. lemon juice

    • 1 egg white

    • 1 dehydrated lemon slice, for garnish

    • Grated cinnamon, to taste

  • Earl Grey Honey Syrup (Yield: 2 cups)

    • 2 bags Earl Grey tea

    • 2 cups water

    • 2 cinnamon sticks

    • 2 cups honey


Preparation

  1. For the Syrup: Bring all ingredients to a boil and reduce to a low simmer for 5 min. Strain and cool before using. 

  2. For the Cocktail: Add ingredients to a cocktail shaker and shake allowing the egg white to foam. Add ice to shaker and shake again to chill cocktail. Strain with fine mesh strainer into a martini or coupe glass. Garnish with grated cinnamon and dehydrated lemon slice.
