Eben Klemm, VP of Beverage & Service at the luxe Hotel Bardo in Savannah, Georgia, wants you to rethink the vermouth on your bar cart. “I am not the first bartender—and I certainly won’t be the last—to remind the American drinking public that we place too many limitations on where and when vermouths should be used,” Klemm says. “Rather than simply serving as a foil for strong spirits in martinis and cocktails, vermouths are wonderful for bringing complexity to light, refreshing drinks.”

Enter the Bardo Eye Opener, a cocktail best enjoyed in the early hours, as its name suggests. Klemm has conjured up a sophisticated mimosa that tastes shiny-bright thanks to grapefruit liqueur and fresh orange juice. He favors Bordiga vermouth bianco to add a subtle sweetness that’s complemented by spicy notes of nutmeg and coriander.

Polish up a Mother’s Day breakfast in bed by adding this cocktail to the tray, or take Klemm’s suggestion and craft a large batch to enjoy with family or friends at your Sunday brunch. However you choose to enjoy it, it’s a celebration in a coupe glass.


Ingredients

  • BARDO EYE OPENER (YIELD: 1 COCKTAIL)

    • ½ oz. vermouth bianco (such as Bordiga)

    • ½ oz. grapefruit liqueur (such as Giffard Pamplemousse)

    • 1 oz. orange juice

    • 3 oz. Prosecco


Preparation

  1. Combine in a mixing glass. Add ice and gently stir five times. Strain into a cocktail coupe and garnish with a lemon horseneck.
