Justine’s Rosé Bellini

In New Orleans, Valentine’s Day (or any day) calls for rosé

When you think of Valentine’s Day, it’s hard not to think pink. And to sommelier Bryce Faucheaux, the beverage director at New Orleans’ Justine, a rose-colored cocktail represents the soul of the brasserie not only during the month of love but year-round. “New Orleans is a rosé town, and Justine Brasserie, where I run the wine and bar programs, is extremely pink-focused,” he says. Faucheaux’s Rosé Bellini pairs rosé with white peach purée, simple syrup, and sparkling wine. Garnished with basil and strawberry, it’s not only the perfect Valentine’s Day selection but an easy choice for warmer weather.

Ingredients

  • ROSÉ BELLINI (YIELD: 1 COCKTAIL)

    • 1 oz. white peach purée

    • ½ oz. simple syrup

    • 4 oz. Provence rosé (Faucheaux suggests Maison Saleya)

    • Splash of sparkling wine

    • Fresh basil

    • Sliced strawberry


Preparation

  1. Fill an all-purpose wine glass with pebble ice and add purée and simple syrup. Then add rosé and stir well with bar spoon before adding a splash of sparkling wine. Finally, garnish with basil leaves and strawberry slices.
