This is boozy, peachy perfection: At barrel strength, the bourbon packs a punch with robust caramel, vanilla, oak, and baking spice notes. But when tempered by softer flavors of peach and honey, you have a drink as smooth as a Sunday evening sunset.
Yield: 1 cocktail
3 ripe peach slices, reserving 1 for garnish (or ¾ oz peach purée; nectarines can also be used)
4–6 fresh mint leaves, plus mint floret for garnish
¾ oz. honey syrup (recipe follows)
1 oz. fresh lemon juice
2 oz. Penelope Barrel Strength Bourbon
1:1 ratio of water and honey
Make the honey syrup: Combine honey and warm water and stir until dissolved.
Mix the cocktail: In a shaker, muddle peach slices and mint with the honey syrup and lemon juice. Add the bourbon and fill the shaker with regular ice. Shake for 10–15 seconds. Strain into a rocks glass or snifter glass filled with crushed ice. Garnish with a mint floret and a peach slice.
