This summer, beat your basic G&T with this pre-Prohibition libation from the pros at Holeman & Finch

1 3/4 oz. gin, preferably St. George Spirits
3/4 oz. lemon juice
½ oz. honey syrup (recipe below)
2 dashes celery bitters, preferably Bitter Truth
Combine ingredients in a mixing glass and add ice. Shake thoroughly and strain into a chilled cocktail glass.
For the honey syrup:
Combine 1 part water with 1 part honey in a saucepan over medium heat. Stir until the honey dissolves.
